Bursting with sherry-soaked vine fruits, juicy glacé cherries and fragrant citrus peels, our classic Christmas cakes are a festive feast for even the most discerning fruitcake lover – generous, treacly and incredibly moreish. Once baked, each cake is carefully transported to the ‘fine art department’ of Bettys, where our team of professional cake decorators create every pinecone, garland and star by hand, and set about painstakingly scrolling and swirling the intricate royal icing borders onto the royal icing and marzipan-topped cake. “We are one of the few places that still works with royal icing – it requires a very steady hand and a lot of focus, and due to the time and expertise required, has become a bit of a lost craft. It makes me so proud to be a cake decorator at Bettys – a mix of traditional sugarcraft, dedication and magic.” – Danni Greig, a second generation cake decorator who has been with us at the Craft Bakery since 1999.
